Chickpea Feta Salad
Ingredients
2 cups Chickpeas
1 tbsp Olive Oil
2 tbsp Red Wine Vinegar
2 tbsp Lemon Juice
Dash of each: Salt and Pepper, Paprika, Oregano
1 tsp minced garlic
1/4 cup cucumber, chopped
1/2 cup tomatoes, chopped
1/4 cup onion, chopped
1/2 cup fresh parlsey, chopped
1/2-1 ounce feta cheese, crumbled
1. Chop up all vegetables and add them into a bowl with the chickpeas.
2. Mix the olive oil, vinegar, lemon juice, seasonings and garlic together
3. Pour the marinade over the vegetables and chickpeas
4. Refrigerate at least one hour
