The Breakfast Clubs: Summer Edition

I’ve noticed a good few fine folks have joined the Stuff Your Cantaloupe Breakfast Club – The ultimate summer breakfast experience.

I highly support this club and all that it stands for, and highly suggest becoming a member if you have not already.

Overnight oats, overnight cottage cheese and oat mixtures, yogurt and fruit and cinnamon… you name it, it can be stuffed into your cantaloupe.

Though as much as I support melon mornings, I will admit than I am not a fully loyal member to the club and therefore do stray on the regular.

This morning I strayed into Smoothie Land with a Strawberry Chocolate Coffee Smoothie.

All measurements very approximate. Because all I ever do is throw random amounts into the blender.

  • 1/2 cup coffee, splash skim milk, splash almond milk, handful fresh strawberries, handful frozen strawberries, tbsp cocoa powder, 1/2 scoop chocolate protein powder, packet Stevia, 1/2 tsp xanthan and guar, mucho ICE.

And a couple days ago I strayed on over into the Baked Breakfast Club with a loaf of Blueberry (Strawberry) Banana Bread from Fat Free Vegan Kitchen.

How I do:

3 (very) large over-ripe bananas
2 tablespoons lemon juice
1/3 cup (80 ml) vanilla soymilk (or apple sauce)
2 tbsp (120 ml) agave nectar maple syrup
1/3 cup brown sugar
splash chocolate almond milk (maybe 2-3 tbsp?)

2 cups (240 g) white whole wheat flour (or regular whole wheat flour)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) blueberries
~1/2 cup chopped strawberries

Baked at 350 for 50 minutes in a greased loaf pan.

No eggs, butter, oil…yet LOOK at the moistness. I didn’t fully mash my banana either so there were plenty of lovely mushy banana chunks. Mmm.

I probably could have cooked it a wee bit longer but I dig the goo so if you make it and aren’t down with the doughy, leave it in longer.

Breakfast is SERVED. Perhaps alongside some now reduced sodium cottage cheese?

Nicely done Nordica. It does taste slightly different but I still dig so thanks for helping me to be kind to my blood pressure and bloat?

Or alongside cottage cheese and PB&J and orange slices. I go all out.

My indecisive and variety-loving nature leaves me switching up my club memberships on a near daily basis.

…especially after searching “Breakfast” on weheartit. Just whoa.

    Your banana bread looks fantastic, I love when there are banana chunks! And that eye breakfast is insane. It made me laugh though!

  2. I’ve never had bfast in a cantaloupe though. I have eaten a cantaloupe with a spoon though just for fun. It’s so juicy and tasty!

    Reduced sodium CC definitely tastes different. I got NO SALT added once and it was waaaaaaaaaaaaay different. I actually didn’t like it but then I made it “sweet” by adding stevia and cinnamon to it and it turned out awesome!

  3. No matter how hard I try to like my cantaloupe stuffed, I just prefer it straight up!! I’m such a rebel that way. LOL!

    I’ve been enjoying simple breakfasts lately, like plain yogurt with apple-cinnamon granola and frozen berries- normally I’m an oat bran devotee but I simply can’t stomach it I wake up in the morning and it’s 27.5C in our apartment!!

  7. This is an awesome post! Everything looks fabulous, I LOVE food with eyes, and that cantaloupe reminds me of a dish we served at the restaurant I used to work. I just found your blog via PB and Jenny and I must say it’s food porn at its best.

  8. Am I the only one who thinks the phrase “stuffing your cantaloupe” sounds a bit dirty? ;)

    I wish reduced sodium cottage cheese was easier to find here. My store doesn’t carry it, which I deem an epic fail, although I secretly like the saltiness of the cheese, especially paired with something sweet.

    i don’t think i’ve ever had the same breakfast twice in a week, so i would be a pretty poopy member of any breakfast club. except maybe the ‘i like lots of variety’ breakfast club.
