Above everything else, I have a special message for a very special person since today happens to be…my Daddy’s Birthday!
Happy Birthday Dad!
He’s special not only because he’s my Dad but because:
He makes a pretty comfy chair.
He can cook ( he makes a mean pot of mac & cheese ;) ), camp, and clean!
He’s great with animals (and his kids!)
He could be a fashion model with the wind blowing through his hair
He gives good hugs
And about a million other reasons that I couldn’t even begin to list.
But to sum it up, he’s a pretty darn cool guy and a pretty darn amazing dad.
So HAPPY BIRTHDAY Dad. I hope it’s as great as you are. Love you lots.
And since yesterday was
St Patrick’s Day…
Obviously I had to rep my breakfast Green style with April’s Dieter’s Dream Pancakes in GREEN.
- 1/2 cup liquid egg whites
- 2 tbsp psyllium husks
- 2 tbsp cottage cheese
- 2 tbsp pumpkin
- 12g french vanilla protein powder
- 1/4 tsp baking powder
- large handful spinach
Topped with strained yogurt, bananas, strawberries and a bit of SF maple syrup, this was a great green way to start off a great green day.
I also had some pancake leftovers with coconut butter as a post-workout pre-pub snack.
Then my St Patrick’s Day began!
I didn’t go nearly as green with my food as last year’s st patty’s day but part of that probably had to do with the fact that I may have accidentally ended up at the pub all day. I had planned to pop in for a beer or two to celebrate the holiday plus a friend’s birthday… but I got coerced against my better judgement into drinking a good few beers while watching soccer, listening to loud Irish tunes and chatting with randoms decked out in green for the next ten hours…And it was such a good time! Despite the fact that I didn’t do any of the essay writing I had planned to do all day… I don’t regret it.
A- St Patty’s only comes once a year
B – I had to be a good friend and stay for my friend’s birthday
C – I never celebrate St Patty’s
D – I need to learn to just have fun sometimes and not worry so much. And I did :)
Drinking all day meant my celebrations were over by 10:30 at night. I was wiped!
And ready for more greenness this morning when I finished off the last of my spinach protein pancakes with strained yogurt (top left), banana (bottom), and strawberry yogurt mixed with peanut butter (top right). Definitely making these protein pancakes again.
Now I seriously have to do that essay writing.
Not. going. well. Eek.
