So I forgot to take pictures of my dinner. Ah well, gotta learn to get into the groove of the photo taking I guess.
I made a tasty eggplant parmesan though, using egg whites and ground up Fibre One for the crust and then topping it with Ragu, a little bit of shredded mozzarella and a little bit of parmesan. It would have been ideal had the cheeses been light versions but I could only work with what was in my fridge so I used a minimal amount. The dish turned out very well though. Yum! I also had a spinach salad on the side.
Because I was still a tad hungry, was craving something sweet, and was very low on my dairy for the day, I decided to have a small bowl of fat free vanilla yogurt with 20g of banana and some mixed cereal (Guardian, Peanut Butter Puffins and Raisin Bran – all in small amounts of course). It satisfied the sweet tooth and the hunger, and I think I’m now good for the night!
